During those 3 years the xbox360 had a good number of dashboard update, at least a couple for year (spring and fall update). We can talk about 3 major versions:
1.0 This is the early Microsoft Xbox360 dashboard (2005/2006), rude but essential (after the first upgrade):
2.0 Fall 2007 dashboard, not a huge change but the dashboard became more beautiful and useful.
At this point the dashboard was able to use Messenger, permitted download while playing and added a new movie streaming service. The most important improvement was the possibility to play Divx:
3.0 This update will be the next one (Fall Update). Huge steps forward and great restyling. Possibility to install the games on the hard drive reducing load times and a brand new option to build your digital avatar and interact with other players:
